We’re pleased to present the last coffee in our series inspired by the colors of the rainbow and the sensory flavor associations we have with them. We might have saved the best for last—since this blend is all about our favorite color: radiant yellow.
This remarkable and vibrant coffee arrives just in time for the beginning of the holiday season, bringing us light and joy with its round body and well-structured mouthfeel and bright notes of peaches, melon and mango.
Sol Naciente (Rising Sun) is made up of six varieties—among them Typica, Bourbon, Caturra and Colombia—that were cultivated by several allied producer partners from the two municipalities of Génova and Salento, in the department of Quindío—our first home—and also by a pioneering producer from Acevedo, Huila, Don Gabriel Castaño, better known as southern Huila’s father of Pink Bourbon.
This time around our qualities team and master roasters separated the roasting process into two parts. The first stage focused on bringing out the flavor profiles in the coffees from Quindío in order to establish the perfect base for the body, sweetness, acidity and aftertaste of the blend. Then, the Pink Bourbon micro lot from Gabriel Castaño was roasted with the intention of highlighting this coffee’s natural fruitiness and aroma. Once both parts were roasted and ready, we carefully combined them to create the perfect balance and proportions for Sol Naciente.
When a coffee crop is planted in a part of the farm that is east-facing and gets abundant morning sunlight, it is traditionally referred to as a cafetal of the rising sun. This saying is the inspiration behind this amazing coffee and, like the rising sun, we hope it illuminates this last month of 2020 with its shining light and positive energy. Enjoy!
