We are proud to introduce Suave Carmesí or Mellow Crimson, the newest blend joining our series of coffees inspired by the colors of the rainbow and how the brain relates flavors to the different tonalities
For our fourth Arcoíris (Rainbow) feature, we sourced and combined several lots grown throughout the four picturesque mountainous municipalities of Chachagüí, Consacá, Pasto and Yacuanquer, all of which are located in the department of Nariño and are characterized by their seemingly endless Andean landscapes and nutrient-rich volcanic soil. Cultivated by eight dedicated producers, whose coffee plantings sit at an altitudinal range of 1,800 to 2,200 m.a.s.l. .
In order to properly highlight the seductive flavors of Suave Carmesí, we partnered with farmers known for their dedication to craftsmanship, detail and careful post-collection processing. These partner producers were especially attentive during the fermentation stages; periods which spanned from 36 to 96 hours. The Castillo, Caturra and Colombia variety beans were then put out to dry for anywhere from just three to 30 days, depending on the local weather conditions.
Rosado, which loosely translates to pink or rose, seemed like the perfect hue to pair with this flavor profile, as it is a sugar-sweet, juicy, and refreshing, reminiscent of dehydrated strawberries, brown sugar, and pink grapes.
