The third edition of our series of coffees inspired by the sensorial attributes found in the colors of the Rainbow, takes us on a journey from the heart of Huila, voyaging through the Andean Mountain range all the way to the far west of Nariño, where the ferocity of the Pacific Ocean meets the land. We are proud to release Pacific Fruit, a blend that imitates nature´s uncanny way of combining different tonalities of green in an interweaving of endless hues as it blends coffees that in their aroma and flavor allude to lemon rind, pear or green tea.
Combining two lots from Huila and six from Nariño, Pacific Fruit is the harmonious result of the hardworking Quality Team in Armenia that began with several washed coffees that were cultivated in the two most important regions in our export program. A landscape of complex topography that nurtured coffee trees of the Caturra, Castillo and Colombia varieties, all of which grew between 1,400-2,200 m.a.s.l. The post-harvest process consisted of a traditional fermentation that ranged between 12 to 50 hours. The last phase, the drying of the beans, oscillated between 8-15 days, depending on the farm where they were grown, and local weather conditions.
We encourage you to submerge yourself in this perfect synthesis of coffees that highlight oceans of varying tonalities of green from the fruiting trees, forests, highlands, deserts, and hillsides that are sustained by the life forces of rivers such as the Cauca and the Magdalena, and the fertile mountains of the Macizo Colombiano.
