This decaf comes from the most mountainous region in Colombia, the department of Caldas, where we have the privilege of working alongside a dedicated group of passionate smallholders from the Cooperativa de Caficultores de Caldas. For this joint effort, we gathered several of the cooperative’s best coffees in order to build a decaffeinated blend like no other currently on the market. This coffee celebrates our shared objective of true transparency, which begins back on the farm, and of course continues all the way to the cup. In cup, this blend is full-bodied and a pleasure to drink, at any time of day.
The producers behind this decaf are from the municipalities of Marquetalia and Manzanares, which sit between 1,600 and 1,850 m.a.s.l. The participating farms are experimenting with a diversity of post-collection processing, where the respective producers are carrying out prolonged periods of fermentation that vary from 12 up to 48 hours in cherry, and 12 to 62 hours in tank, after which the beans were washed and dried mechanically.
A decaffeinated coffee from Azahar is the direct result of a customized process we created with our allied decaffeination plant Descafecol, based in Manizales, the capital city of Caldas. Together, we carefully monitor each step, in order to preserve the sensorial characteristics or cup profiles of each micro lot we worked with. The process consists of first putting the green coffee through a stream of vapor which opens the bean up in preparation for the next step of flushing it with natural components, specifically with ethyl acetate, a derivative of fermented cane sugar, which acts as a solvent which gradually removes most of the naturally-occurring caffeine in the coffee.
Once the decaffeination stage is complete, our Qualities Team will cup the raw the material in order to assure that the coffee has not lost the relevant sensorial qualities it arrived with from the farm. Next, various different roast profiles will be tried and evaluated with the objective of finding the curves which best highlight the residual attributes in cup of flavor, body and sweetness that will result once the beverage is prepared.
