Blend Agua Dulce—Sweet Water—is back again this year, representing the first selection in the second round of coffees that celebrate the aromas and sensations of blends inspired by the colors of the rainbow. We chose to start this season with this special mix as it was one of the most well-received lots when we launched our Rainbow series last year. Agua Dulce has a tempting profile in cup, with notes of ripe blueberries, which present the palate with an abundance of blue fruit-forward flavors.
The life of a coffee always begins on the farm, in the field, with the special nurturing and cultivation of the plants, which actually begins with the careful selection of the seeds, lots of care and intention as the seedling grows, eventually bearing the literal fruit of its labors: the cherry. For Agua Dulce 2021, the care and post-collection processing was done by four coffee growers from the municipality of Quindío, specifically from the picturesque municipality of Pijao, known internationally for its high-quality, high-altitude specialty coffee, grown between 1,700 and 1,900 m.a.s.l.

The four lots these partner producers cultivated were all treated to a washed process. They were respectively fermented in tanks between 10 to 18 hours. Once each individual micro was cupped and quality-tested, we utilized a Nordic-style roast profile which is characterized as quick and light; with the objective of making each screen (refers to the size of the bean) shine respectively by highlight the winning properties of each coffee. By separating the beans by size to roast them using this process, with each batch, we can control and reinforce each sensory attribute, as related to screen size. With screen 18 we highlight the body in cup, with 16 the aftertaste and with 17 and 14 we focused on sweetness.
This round of Blend Agua Dulce is vibrant and clean in cup. This blend celebrates the freshness which this color calls to mind, recalling the fresh and almost daily rains characteristic of this origin.
