This blend exemplifies the hard work, pride and passion for coffee cultivation characteristic of various municipalities of the northern part of the department of Huila. Situated between 1,500 and 1,900 m.a.s.l, the many farms whose product comprises our Blend Huila Norte are no bigger than 5 hectares each. The coffee production in this part of Colombia benefits greatly from access to the waters of the Magdalena River, which travels 1,500 km. from “El nudo de los pastos” or the “knot of the pastos”, also known as the Massif of Huaca, a mountainous complex located partly in the department of Nariño, and which marks the division of the Andes mountain range into two ranges the Occidental and Central, all the way to the Caribbean ocean.
The majority of the producers in this zone process their coffee in the traditional and artisanal manner most utilized throughout the country. They wait till the cherries are at their peak ripeness in order to harvest them by hand. They select them carefully and ferment the beans in tanks filled with water. Due to its proximity to the Tatacoa Desert, temperatures in this northern part of Huila can climb upwards of 38° C, which results in shorter fermentation times compared to other regions; usually between 12 to 18 hours. Finally, the beans are dried over a specific amount of time (that varies depending on location, sunlight and temperature) ensures the ideal humidity levels.
Coffee is grown throughout Colombia, in several territories, but recently Huila has become one of, if not the, top coffee-producing departments. Year after year Huila has also maintained a reputation, both nationally and internationally, for being home to some of the best coffees in the world, having in fact won the Colombian Cup of Excellence several times. Huila has also gained international recognition for having received designation of origin, a prestigious recognition and protection not held by any other Colombian department. Understandably this is a great source of pride for Huila’s coffee producers.
